We are really excited to present this low-ABV beer, as our debut journey into the world of gluten free!

In this process, Brewers Clarex was added to the fermenter at the start of fermentation which breaks gluten in the beer down, bringing the gluten level down to under 10 parts per million, and making it declarable as gluten free.

We’ve used some of our favourite to dry hop, Citra Mosaic and Idaho 7 (and weighted heavily on the Mosaic). This has given a rounded and punchy aroma to the beer, which we’re really happy with. The hop flavour is great too.

The malt grist uses Maris Otter for that full flavoured base, and gives the beer its lovely golden colour. Then we added Munich and Dextrin malt for mouthfeel and a little bit of complexity.

This beer was fermented with our house yeast culture, lending subtle fruit esters and providing that characteristic crisp finish.

Pyramid Song is available in cask only, so get yourselves down to the pub and enjoy some beer in the sunshine. And if you’re gluten free and this is your first Castle Rock beer. Cheers!
