Easy drinking hazy pale with Cashmere hops. Refreshing notes of lemon, lime and peach are balanced by a satisfyingly smooth mouthfeel and a gentle, bitter finish.

Cold Weather Blues is our latest hazy, hop forward IPA brewed with Cashmere hops.  

It’s a single hop beer using the unique variety, Cashmere, a US hop with a distinct flavour profile of tropical and stone fruits. We dry hopped at 5g/l with Cashmere pellets – adding loads of citrus notes, as well peach, pineapple and melon aromas. Think fruit salad sweets and you’re halfway there. The hot-side hops also bring a very satisfying bitterness on the finish, making it incredibly moreish.   

A healthy addition of naked malted oats in the grist, combined with higher chloride levels in the water profile, help increase perceived body and provide a full mouthfeel, balancing the hop bitterness. 

We fermented this one with a London Ale iii yeast strain, delivering yet more stone fruit goodness and tropical esters (aroma compounds produced as a biproduct of fermentation). Typically, this yeast strain is low attenuating, meaning that it leaves more residual sugars, and, therefore, more perceived sweetness in the beer after fermentation.  

Keen bar surveyors may have also picked up on a small custom edit made to the pump clip! We designed this recipe with a slightly more sessionable ABV of 4.3% in mind but a lower than anticipated mash bed temperature meant the beer finished at a well-rounded 4.8%. The beer name Cold Weather Blues was actually inspired by a Muddy Waters song but we’re glad it works on a few levels! Happily, the profile and the balance of the beer remains unscathed, and in the interest of reducing unnecessary waste we decided a simple modification to the pump clip would suffice… 

This beer would pair excellently with some freshly baked bread, a wedge of cheese, and a vibrant, spiced chutney. But that’s just our humble opinion.
