A bright and zesty dry-hopped ale that is deliciously drinkable. Pale golden in colour, with delicate aromas of papaya, orange, and subtle grapefruit; sweet biscuit up front from the Maris Otter base malt, followed by gentle warmth at the back of the palate and finishing with a bold (yet balanced) hop bitterness.
4.5% ABV – available now in cask in our pubs and beyond.
Feeling Good is the second beer in the dry-hopped pale series of 2023. As with all of the dry hop pale series, the focus with this beer is drinkability, flavour, and balance.
The malt grist is comprised of a blend of low-colour Maris Otter and Ex Pale Ale Malt, which keeps colour low and malt flavour subtle. There’s also a couple of sacks of torrefied wheat added for head retention and lacing.
We used Citra and Centennial leaf hops as hopback additions on the hotside to add a base layer of late hop flavour to the beer. The beer was fermented using our house yeast culture giving it a characteristic clean and crisp finish, bringing all the flavours together and into balance.
After fermentation we dry hopped with Ekuanot and Comet varieties at a rate of 4g/l to provide top notes of citrus, pine and some tropical fruit flavours to the beer.
The intention was that this beer presented bright on the bar, so it is fined with isinglass. However, we have found that some casks are taking longer to drop bright than normal, and some are presenting with a slight haze. We believe this may be a slight hop haze, caused either by higher than normal carry over of hop matter into final package, or a slightly extended dry hopping time. Either way, the flip side of this lack of perfect clarity is that the beer has a very pleasant hop profile, and we are confident that most landlords and drinkers will accept a slight haze in a fined beer if the flavour is good.
