Our next collab of the season took us to Leeds, where Duke, from our Sales Team, and Rachel, from our Marketing Team, joined forces with Giuseppe and Ele, the talented husband and wife team behind DMC Brewery, to create something fresh and fiery: a brand new ginger beer; Ambika, brewed with ginger, mango and lime.
A Brew Steeped in History
Before the first root of ginger was pulped, this collab had a story behind it. Rachel brought along a genuine relic from her family’s brewing past – a stoneware bottle from her great-grandad’s Yorkshire-based W. Spencer & Sons ginger beer brewery in Sowerby Bridge.
DMC’s own collection of vintage stoneware bottles made for the perfect photo opportunity for this family heirloom, and it was a real moment of pride to place the bottle among kindred artefacts of brewing history.
While chatting over the brew, we learned more about the fascinating roots of ginger beer itself – first created in Yorkshire in the 1700s during the colonial spice trade with the Orient and Caribbean. It was a brew born from bold flavour and global connections – something we think this modern take captures perfectly.
Fresh, Fruity, Fiery
Back to the brew: Duke got hands-on, helping pulp a phenomenal amount of fresh ginger. Combined with sugar, mango, and lime juice, this ginger beer is sharp, juicy, and incredibly drinkable – with a warming kick and citrus zip that’s perfect for summer supping.
After everything was in tank, we took a break to share stories (and a seriously good lunch), hearing all about how Giuseppe, a former Michelin-starred chef, and head brewer Ele started DMC as a lockdown project that’s grown into a full-fledged brewery and taproom. The passion for flavour and creativity was clear in every part of the process.
Pub Stops & Promises to Return
With time to spare, Giuseppe took us for a quick pint at one of Leeds’ legendary pubs – The Duck and Drake – before heading back to the brewery and taproom for a farewell round and a toast to future collabs.
