Brewer’s Notes: Cosmic Dancer

We’ve had a lot of fun developing new recipes for our music-inspired dry hop pales recently, and this beer is no exception.

To bring a little more colour to Cosmic Dancer, and a bit more complexity to the palette, we added Munich malt and a hint (just a hint) of chocolate. Think biscuit and toasted cereals. All this helps provide balance and structural support for the dry hop bill.

Speaking of which, we used a trio of some of our favourite hops – Mosaic, Ekuanot and Citra cryo – to dry hop. We’re really pleased with the flavour and aroma that has come through to the final beer. Mosaic brings complex berry and stone fruit, Ekuanot brings citrus and tropical notes, and a little bit of Citra cryo brings a hint of grapefruit and lychee.

We have dry hopped at a relatively modest rate, which we think we works better for cask products, and helps us focus on balance and drinkability.

We fermented this beer, as with all our core and dry hop pales, with our house ale yeast culture, which provides the beer with its typical clean and crisp finish and helps marry the flavours of the hops and malt.

Malt: Maris Otter, Low Colour Maris Otter, Munich, Torrefied Wheat, Chocolate

Hops: Mosaic, Ekuanot (kettle); Mosaic, Ekuanot, Citra Cyro (dry)

Yeast: Castle Rock House Culture

Allergens: Malted barley, wheat (gluten)
