This beer is designed and brewed as a follow up to Just Can’t Get Enough. We are excited to be bringing another unfined, naturally hazy, session IPA to you in cask.

It’s a single hop beer, showcasing one of our favourites: Mosaic. We had a lot of fun with the recipe and process of this beer, trying out some techniques we’ve not used before to make this as sweet, juicy and full-bodied as we can for a session ABV.

We have pushed the mash temperature further than we have ever done before (around 69⁰C to help give the beer lots of residual unfermentable sugar, to increase body and mouthfeel. This is boosted by a chunky addition of naked malted oats in the grist.

Hot side hop additions have been kept relatively low to reduce perceived bitterness, however we did stick a healthy amount of Mosaic leaf hops into the wort just after boil, at a reduced temperature of 80⁰C, so we could extract hop oils without too much bitterness. This gives the beer a really nice late aroma flavour and a bit more depth to its overall hop profile.

The beer was fermented with a London Ale iii strain, which provides stone fruit and tropical esters, as well low attenuation characteristics, helping leave more residual sweetness after fermentation.

We dry hopped at 7g/l with Mosaic and Mosaic Cryo pellets, bringing lots of citrus and tropical notes to the aroma and flavour profile of the beer, as well as a little perceived bitterness to the finish.

This beer would pair really well with a fragrant curry and fresh naan bread, or some spicy tacos.
